Grilled Watermelon & Balsamic Chicken is a tender chicken breast topped with grilled watermelon, soft goat cheese, fresh mint and a drizzle of balsamic reduction for a fresh summer meal that is healthy and delicious!

INGREDIENTS
- 1 lb. boneless skinless chicken breasts
- 1 tsp. salt
- ½ tsp. pepper
- 8 1" wedges watermelon
- 4 oz. soft goat cheese, chèvre
- 6 leaves fresh mint, finely diced
- ¼ c. balsamic reduction
INSTRUCTIONS
- Heat your grill to medium. Season the chicken breasts with salt and pepper and cook for 6-8 minutes or until they are no longer pink in the center. Add the wedges of watermelon to the grill and cook 1-2 minutes on each side, or until grill marks are evident.
- Remove the chicken and watermelon from the grill and allow the chicken to rest for 5 minutes so the juices set. Meanwhile, cube the watermelon into 1 inch pieces.
- Top the chicken with watermelon, goat cheese, mint and balsamic drizzle. Serve immediately.
