Parmesan-Ranch Oven-Baked Zucchini Coins
Yield: 4 servings
- 1/3 cup Hidden Valley Cucumber Ranch
- 2 medium zucchini
- 1/4 cup shredded Parmesan cheese
- fresh dill, chopped
Instructions:
- Preheat the oven to 475 degrees.
- Wash the zucchini and slice it into 1/4-inch thick rounds.
- Spread each side with a thin layer of Hidden Valley Cucumber Ranch, and lay them out on a baking sheet covered with aluminum foil. Sprinkle each coin with Parmesan cheese.
- Bake at 475 degrees for about 15-16 minutes or until the tops are starting to brown.
